Hot cross buns without the cross because I had no icing sugar. The oven is also not working so I cooked them in the pan and browned them under the griddle.
2 Cups White flour
1/3 cup Sugar
2 tsp Dried yeast
2/3 cup Raisins
1 tsp Cinammon
1 tsp Pumpkin Pie Spice Extract
1 tbsp Powdered Egg or 1 Whole Egg
2 tbsp Milk Powder or 3/4 cup tepid Milk
2 tbsp Vegetable Oil
Water - between zero and 1-1/3 cup, depending if you used all dry ingredients or used fresh egg and fresh milk. You want a slightly tacky dough, but not wet.
For the Cross:
2 tbsp White Flour
2 tsp Powdered Sugar
Water to bind to a paste
For the Glaze:
1 tbsp Water
Combine dry ingredients well. Add wet ingredients. Combine well but no need to knead. Rest for 1 hour covered. Form into balls. Lay on the baking tray and allow to rise for another hour. Pipe on the cross pattern.
Then cook for approx 15 mins at 380F or, if using a frying pan, cook on the stove on the lowest setting for 15mins covered with a lid (you will need to finish them by browning the tops under the griddle).
Apply the glaze liberally with a brush while buns are still warm.
